Tasty Beetroot Ravioli

Looking for a tasty, meat-free meal with a little Italian flavor? If so, you might want to try out this yummy beetroot ravioli recipe, which not only doesn’t include any meat, but does not include dairy products as well.  Here’s a list of the ingredients and procedure for creating this meal

Green Garlic Oil

1 cup of fresh chives
 2 cups of organic grape seed, or mild organic olive oil
 Half a cup of chopped parsley
3 teaspoons of coarsely crushed young garlic
Pinch of sea salt

Blend the parsley, chives, sea salt and oil, then pour it through a chinoise or a fine mesh strainer while slowly stirring the oil out into a container.  Dispose of the leftover pulp and then toss the garlic into the oil and allow it to sit for one day.

Herb and Cashew Bourson

2 cups of cashews soaked for 12-14 hours
1 teaspoon of New Chapter Probiotics dissolved in 1 cup warm filtered water, or 1 cup fresh rejuvelac
Half a teaspoon of onion powder
2 teaspoons nutritional yeast, small flake
1 & a half teaspoons of finely diced chives
1 teaspoon of sea salt
2 teaspoons of finely minced parsley
2 teaspoons of finely minced shallots
Cracked black pepper

Blend the cashews in with the probiotics and water until the mixture is smooth. Place the mixture in a glass bowel, place a towel over it and allow it to sit for 14 to 16 hours in a warm place.  After allowing the mixture to sit, mix in the remaining ingredients to create the bouson cheese feeling.

Ravioli

1 large beetroot
Aged balsamic vinegar
Course Sea salt to taste
Minced chives
Fresh Cracked black pepper

Slice the beetroots so they are paper-thin.  Marinate the beets in the garlic oil for one hour.  Then, lay the beets out flat and place about one tablespoon of the cheese filling into the center of each one.  Place another sliced beet over the top and then drizzle some of the garlic oil over the top.  Top it all off with by flavoring with the minced chives, cracked pepper, aged balsamic vinegar and sea salt.

Ginger Sauce

Ingredients:

1 tb Garlic, finely chopped
2 tb Brown bean paste
1/4 c  Ginger, finely chopped
1 ea Serrano chili, stemmed & finely chopped
2 tb White vinegar
1 tb Sugar
1 tb Soy sauce
3 ea Cilantro sprigs, chopped

Preparation:

Mix all ingredients thoroughly. Use immediately or at least within 6 hours of preparation as the flavours will get stronger the longer the sauce sits. This thick, dark, rich & spicy sauce goes well with as a dipping sauce with bland foods such as tofu.

Barbecue Soy Burgers

Ingredients:

1 sm Onion (minced)
2  Garlic cloves (mashed)
2 tb Butter or margarine
2 c  Cooked soybeans (drained)
1/2 c  Fine bread crumbs
1 Egg
2 tb Soy sauce
2 tb Sesame seeds

Preparation:

These nutty burgers are a barbecue favorite, great on whole-wheat onion bun  with the traditional toppings of tomato, cheese, lettuce and so on. Freshly  ground black pepper to taste In a small pan, saute onion and garlic in butt  or margarine, and cook until translucent. Set aside. In food processor, whit beans, bread crumbs, egg, soy sauce and sesame seeds to a coarse meal.   Transfer to a medium bowl, add garlic- onion mixture and black pepper, and  mix well. Shape into 4 patties. Heat on grill till brown, giving them about  5 minutes each side.
